Since we don‘t have a microwave, this is a great alternative to fat head dough. Only works for pizza and not fancier things that fat head dough can do like danishes.
Ingredients
- 1½ cup mozzarella, shredded or not in liquid
- 2 oz cream cheese, softened
- 1 egg, room temp
- ¼ tsp garlic powder
- ¼ tsp Italian seasoning
- Pinch of salt
- Pinch of pepper
- ¾ cup almond flour
- ½ cup tomato sauce
- Pizza toppings
Method
- Preheat oven to 425°F.
- If using a piece of mozzarella, cut a few pieces and with the blade of a food processor, process until crumbly and you have 1½ cups. Remove from food processor.
- Place cream cheese, egg and seasonings in food processor. Process until smoothish. This is lazy dough, lumps are OK.
- Add shredded mozzarella and almond flour to wet ingredients, pulse until sticky dough forms.
- Spoon dough into ball on parchment paper on a cookie sheet. Place another piece of parchment on top. Flatten or roll into crust-like shape between papers. Remove top piece of parchment.
- Cook in preheated oven for 12-15 minutes until golden brown on top.
- Remove from oven, flip over on other parchment paper.
- Top with your sauce and favorite toppings.
- Cook another 12-15 minutes depending on how brown you like your pizza.
- Let cool for 2-5 minutes. Cut and serve.
