Chocolate Wafer Cookies

Seriously good imitation of the cookie portion of Oreo cookies. Especially good cold and crumbled into ice cream or frosting.

Ingredients

  • 3½ cups almond flour
  • ⅔ cup cocoa powder
  • 4 Tbsp granular Splenda
  • 2 Tbsp granular erythritol
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs, slightly beaten
  • ¼ cup butter, melted
  • 1 tsp vanilla extract
  • ⅛ tsp liquid stevia

Method

  1. Preheat the oven to 300°F and line two baking sheets with parchment paper.
  2. In a large bowl, combine almond flour, cocao powder, erythritol, baking powder and salt. Add in eggs, butter, vanilla and stevia and stir well until dough comes together.
  3. Roll out dough between two pieces of parchment paper to about ⅛ inch thickness. Lift off top piece of parchment and set aside. Slice into 2-inch squares or use a 2¾ inch diameter cookie cutter. Place cookies on prepared baking sheet. You should get about 40 or 50 cookies.
  4. Bake cookies until firm to the touch, about 30 minutes. Remove from oven and let cool. They will crisp up as they cool.
