Seriously good imitation of the cookie portion of Oreo cookies. Especially good cold and crumbled into ice cream or frosting.
Ingredients
- 3½ cups almond flour
- ⅔ cup cocoa powder
- 4 Tbsp granular Splenda
- 2 Tbsp granular erythritol
- 2 tsp baking powder
- ½ tsp salt
- 2 large eggs, slightly beaten
- ¼ cup butter, melted
- 1 tsp vanilla extract
- ⅛ tsp liquid stevia
Method
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a large bowl, combine almond flour, cocao powder, erythritol, baking powder and salt. Add in eggs, butter, vanilla and stevia and stir well until dough comes together.
- Roll out dough between two pieces of parchment paper to about ⅛ inch thickness. Lift off top piece of parchment and set aside. Slice into 2-inch squares or use a 2¾ inch diameter cookie cutter. Place cookies on prepared baking sheet. You should get about 40 or 50 cookies.
- Bake cookies until firm to the touch, about 30 minutes. Remove from oven and let cool. They will crisp up as they cool.
