Chocolate and peanut butter are such a natural combination that it doesn’t matter they share a name with the Ohio State mascot.
Ingredients
- 1 batch Good Dee’s Brownies (follow directions for fudge-like brownies)
- ¾ cup peanut butter
- 6 Tbsp butter
- ½ tsp vanilla
- ¼ tsp salt
- ¾ cup powered erythritol, sifted
- ½ cup heavy whipping cream
- 3½ ounces dark chocolate, finely chopped
- ¼ tsp vanilla extract
Method
- Line an 8x8-inch baking pan with parchment paper, with an overhang for easy removal. Prepare the brownie batter as directed for fudge-like brownies. Bake the brownies as directed and let cool in the pan.
- In a small saucepan, over medium heat, melt together peanut butter and butter. Stir in vanilla and salt.
- Stir in powdered sweetener, a little at a time, until the mixture thickens to a spreadable consistency. Spread over cooled brownies and refrigerate 1 hour, until set.
- In a small saucepan, heat the cream until just simmering. Remove from heat and add the chopped chocolate. Let sit 5 minutes to melt.
- Add the sweetener and vanilla and whisk until smooth. Let sit a few minutes to thicken, then spread over the peanut butter layer.
- Lift brownies out by edges of parchment paper and cut into squares.
