Grilled cheese sandwich that you can pick up and eat like a real one.
Ingredients
- 1 medium head of cauliflower, or 1 bag fresh cauliflower rice
- 1 large egg
- ½ cup shredded Parmesan cheese
- 1 tsp Italian seasoning
- 2 thick slices of white cheddar cheese (or ½ cup shredded cheddar cheese)
Method
- Preheat oven to 450°F.
- In a medium pot, fill with about ½ inch of water and a pinch of salt. Cover and bring to a boil.
- If using whole cauliflower, cut into florets. Place florets in a food processor and pulse until crumbs about half the size of a grain of rice.
- After water boils, add steamer and then cauliflower. Reduce heat to simmer. Steam for about 10 minutes.
- Remove pot of cauliflower from heat, uncover. Let cool for a few minutes.
- Transfer steamed cauliflower to a mesh strainer. Push out as much water as possible with a rubber spatula.
- In a medium bowl, add cheese, seasoning, and cauliflower. Stir to combine. Add egg. Stir again until smooth paste forms.
- Divide dough into 4 equal parts. Place onto large baking sheet lined with silpat or parchment paper. Using your knuckles and fingers, shape into square bread slices about ⅓ inch thick.
- Bake cauliflower bread for about 15-18 minutes or until golden brown. Remove from oven and let cool a few minutes.
- Using a good spatula, carefully slide cauliflower bread off of parchment paper.
- Grate or slice cheese. Preheat a large pan with butter over medium.
- Reduce heat to medium-low. Place one slice of bread in preheated pan, add slice or shredded cheese. Then top with another slice of bread. Butter the top of the sandwich. Cook for a few minutes until cheese is starting to melt. Flip. Cook for a minute until the cheese is completely melted.
