Forget the marshmallows, this apple, raisin, pecan and yam casserole is delicious.
Ingredients
- 2 apples, peeled, cored and sliced
- 1 cup raisins
- ¼ cup butter (1/2 stick)
- ½ cup honey or to taste (I prefer using brown sugar, to taste)
- 2 slices lemon
- 1 can (1-pound) yams, drained (I zap about 3 - 4 fresh yams or sweet potatoes in the microwave until tender, then peel and slice ‘em)
- 1/3 cup chopped pecans
- ½ cupped pecans (more nuts the better)
Method
- Preheat oven to 350 degrees.
- Combine first 6 ingredients in a saucepan and cook over low heat for about 15 minutes or until apples are almost tender. Remove lemon slices.
- In a buttered casserole, slice yams and spread apple mixture evenly over them. Sprinkle top with chopped pecans.
- Bake in a 350 degree oven for about 15 minutes or until casserole is heated through.
